#30 - Strawberry Sekanjabin

This is a modification of a medieval middle eastern beverage syrup. This takes a typical sekanjabin and just adds strawberries.

Recipe

  • 1.5 lbs of diced strawberries
  • 1 cup white wine vinegar
  • 4 cups white sugar
  • Bunch of mint

Steps

Dissolve the 4 cups of white sugar in 2.5 cups of water.

When the sugar is fully dissolved and the solution has reached a boil, add the 1 cup of white wine vinegar.

After 20 minutes of boiling (or more as needed), add the diced up 1lb of strawberries.

Continue cooking for another 10 minutes or so.

Turn off the heat and toss in the mint.

Strain into a sanitized container and chill.
